This dish is one winter warmer. A quick, delicious and family friendly easy sausage traybake - the perfect midweek meal. Delicious sausages baked with diced potatoes and onions. Served with an apple sauce.

INGREDIENTS
 2 Granny smith apples
 550 g Potatoes
  Red onions
 4 Jalapeno sausages

Turn the oven on and preheat to 210C.

Chop the potatoes into bite sized pieces. Chop the onions into quarters (leave the skin on). Place the potatoes, sausages and onions on an oven tray, drizzle with 2-3 tablespoons of olive oil, season with some salt and pepper and toss until combined. Place in the oven and cook for 20-25 Minutes, or until the potatoes are tender.

Peel the apples and discard the skin and core. Dice the apples into small chunks.

Fill a medium pot with 200ml [300ml] of cold water. Add the apples and bring to the boil on high heat. Once boiling, reduce the heat to medium and cook for 12-15 Minutes, or until the apples are tender.

When the apples are done, remove them from the heat and mash them until they remsemble a coarse homemade apple sauce.

When the onions, sausages and potatoes are done, remove from the oven and carefully remove the onion skins and seperate the onion into petals.

Divide the onion petals, sausages and potatoes between plates and serve the apple sauce on the side. Enjoy!
