CREAMY SPINACH POTATO MASH WITH SMOKED FISH

A great dinner which can be whipped up in less than 30 minutes. Creamy mashed potatoes with spinach, garlic and scallions. Topped with smoky fish and a poached egg.

 2 Garlic cloves
 2 Scallions
 2 Smoked coley fillets
 40 g Grated mature cheddar
 550 g Free-range eggs: 2 potatoes
 120 g Spinach
 1 tbsp Butter

Boil the kettle. Preheat the oven to 200C.

Chop the potatoes into bite-sized pieces. Peel and chop the garlic. Place the potatoes and garlic into a pot of boiling water (use the kettle water), add some salt and cook on medium-high for 15-20 Minutes, or until tender. Boil the kettle again.

Place the spinach in a colander. Pour the kettle water over the spinach until it wilts. Once wilted, rinse the spinach with some cold water. Squeeze the spinach to remove excess water. Boil the kettle again!

Finely chop the scallions and spinach.

Place the smoked fish on a baking tray. Drizzle with some olive oil and season. Place in the oven and cook for 10-12 Minutes or until the fish is cooked through.

Heat another pot with some boiling water on medium. Crack the eggs into the water and cook the eggs for 3-4 Minutes. Once done, place on a plate and season with some salt and pepper.

Once the potatoes are cooked, drain and place them back in the pot. Add the butter and a splash of milk (if you have some) into the pot, mash until smooth. Add the spinach, cheddar and scallions and stir until combined. Season with some salt and pepper.

Divide the mashed potatoes between plates, serve the smoked fish on top and top with the egg. Season with some pepper. Enjoy!
